Miami-style Meatloaf

INGREDIENTS:

* 4 slices dry whole wheat or white bread
* 1 1/2 pounds lean ground beef
* 1/2 pound lean ground turkey
* 1 tablespoon olive oil
* 1 cup chopped onion
* 1/2 cup chopped green bell pepper
* 1/4 cup chopped red bell pepper
* 1 clove garlic, finely minced
* 2 eggs
* 1/2 cup plain low fat yogurt or light sour cream
* 1 teaspoon salt
* 2 teaspoons prepared horseradish or mustard
* 1 to 2 tablespoons Pickapeppa Sauce, or use several dashes of another hot pepper sauce, depending on strength
* 3 tablespoons ketchup

PREPARATION:
Put dry bread in food processor and pulse until crumbs are fine. In a large bowl, mix the crumbs into the ground beef and turkey. Set aside. Heat the olive oil over medium heat and saut‚ the onion and chopped bell pepper until the onion is soft, about 3 minutes.

Add the garlic and saut‚ for 1 minute longer. Set aside to cool. In a food processor, mix together the eggs, yogurt or sour cream, horseradish or mustard, salt, and pepper sauce. Add the cooled chopped vegetables and the egg mixture to the meat mixture and mix. Combine gently but thoroughly with your hands. Pat the mixture into a loaf pan. Spread ketchup over top of meatloaf and bake in a preheated 350ø oven for 1 1/2 hours. Let stand 10 minutes before slicing.
