Vegetable Soup Meatloaf

INGREDIENTS:

* 1 1/2 to 2 pounds ground beef, lean
* 1 can condensed vegetable soup (approx. 10 1/2 ounces)
* 1 egg, beaten
* 1/2 cup fine bread crumbs or 2 or 3 slices of bread, shredded
* 1/2 cup chopped onion
* 1/4 to 1/2 cup chopped green bell pepper, optional
* 1 tablespoon prepared mustard, optional
* 1 teaspoon salt, or to taste
* 1/4 teaspoon black pepper

PREPARATION:
Mix all ingredients together gently; shape into a loaf. Place in a shallow baking dish and bake for 1 to 1 1/2 hours, or until done.
Serves 6 to 8
